Ingrediënten:

  • 1 aubergine
  • 1/2 rode paprika
  • 1/2 groene paprika
  • 2 stevige tomaten
  • 1 hardgekookt ei
  • 1 eetlepel mayonaise
  • 1/2 – 1 eetlepel crème fraîche of zure room
  • 1 theelepel mosterd
  • zout
  • peper
  • 1/2 eetlepel fijngeknipte bieslook
  • enkele sprietjes bieslook

Bereidingswijze

Dieet: Vegetarisch dieet

Was de aubergine, snij het kroontje eraf en snij hem in blokjes. Breng eenbodem water aan de kook en kook de blokjes aubergine gedurende enkele minuten.Giet ze af en laat ze in een vergiet uitlekken en afkoelen. 

Maak de paprika’s schoon en snij ze in reepjes. Was de tomaten en snij ze inpartjes.
Maak de dressing door de mayonaise, de créme fraîche of zure room, mosterd,zout, peper en fijngeknipt bieslook goed te vermengen. Neem een mooie slakom enschep de groenten en dressing voorzichtig door elkaar. Pel het ei en snij het inpartjes. Garneer de salade met de partjes ei en wat sprietjes bieslook.

Dit gerecht bevat 200 gram groente per persoon.
