Ingrediënten:

  • 100 g gemengde sla
  • ca. 250 g verse champignons of eventueel 250 g uitgelekte champignons in plakjes uit blik of pot
  • 1 kleine ui
  • 1 eetlepel olie
  • 4 eieren
  • 2 eetlepels melk
  • peper
  • zout
  • 75 g ham in reepjes
  • enkele takjes fijngeknipte peterselie

Bereidingswijze

Dieet: Glutenvrij dieet

Verdeel de sla over 2 borden. Maak de champignons schoon en snij ze inplakjes. Pel de ui en snij deze fijn. Verhit de olie in een koekenpan en bakhierin de ui enkele minuten samen met de champignons. Klop in een kom de eierenlos met de melk, peper en een beetje zout. Roer de ham erdoor. Giet de eierenover de champignons in de koekenpan. Laat de omelet op een laag vuur gaar endroog worden. Laat de omelet op een bord glijden en snij hem doormidden. Schuifde halve omeletten op de bordjes met sla. Strooi de peterselie over deomeletten.
