Ingrediënten:
- 4 takjes peterselie
- 1 citroen
- 1 teentje knoflook
- 50 g zachte boter of margarine
- zout
- peper
- 450 g bospeen
- een beetje suiker
Bereidingswijze
Dieet: Vegetarisch dieet, Lactosevrij dieet, Glutenvrij dieet
Knip de peterselie in een kommetje fijn. Boen de citroen onder stromend watergoed schoon. Rasp ongeveer 1 theelepel gele schil van de citroen boven depeterselie. Pel het teentje knoflook en pers het boven de peterselie uit en roerde boter of margarine erdoor. Breng op smaak met zout en peper. Spreid eenstukje plasticfolie op de aanrecht uit en leg de peterselieboter hierop. Rol hetop tot een rolletje en laat de peterselieboter in ongeveer 1 uur opstijven in dekoelkast. Maak de bospeen schoon en snij de bospeen in stukjes. Kook de bospeenin een pan met weinig water, snufje zout en wat suiker zachtjes gaar. Giet debospeen af en leg de groente in een schaal. Snij de peterselieboter plakjes enleg deze op de bospeen. De peterselie boter die je eventueel overhoudt, smaaktheerlijk op vers gebakken stokbrood.
Per persoon ongeveer 200 gram groenten
Lekker met een stukje vis en gebakken aardappelen.
