Bruschetta met gestoomde radicchio en rucola

Ingrediënten:

  • 1 kropje radicchio
  • 2 dikke sneden stevig witbrood of Italiaans witbrood met harde korst
  • ca. 40 g parmezaanse kaas
  • ca. 25 g rucola
  • 2 – 3 eetlepels olijfolie
  • 1 takje verse oregano
  • versgemalen peper

Bereidingswijze

Verwarm de oven voor op 225 graden C. Was de radicchio en rucola, snij degroenten in brede repen en slinger of dep ze droog. Rasp de parmezaan fijn opeen fijne rasp en klop de olie erdoor. Doe de groenten in een stoommandje of ineen hittebestendig vergiet.Breng een pan met ruim water aan de kook en stoom degroenten circa 1 minuut tot ze iets slinken maar nog beet hebben. Leg intussenhet brood op het rooster van de oven en bak het in 2 minuten krokant. Sprenkelwat parmezaanolie over de bruschetta, leg de groenten erop en verdeel de restvan de parmezaanolie erover. Garneer eventueel gebakken brood met blaadjesoregano en maal er peper over. Serveer meteen.

Dit gerecht bevat circa 75 gram groente per persoon.

Verdubbel de hoeveelheden voor een diner. Leg in dit geval op de parmezaanolie eerst twee plakken rauwe ham of Mortadella en verdeel vervolgens de groenten eroverheen.
