Ingrediënten:

  • 5 dl runderbouillon eventueel van 1 bouillonblokje
  • 1 sjalot
  • 2 takjes bladselderij
  • 1 stengel sereh (citroengras)
  • ca. 200 g cassave
  • 1/2 – 1 Madam Jeanette peper of andere groene peper

Bereidingswijze

Dieet: Vegetarisch dieet, Glutenvrij dieet, Lactosevrij dieet, Kippenei

Pel de sjalot en snipper deze fijn. Knip de bladselderij fijn. Schenk debouillon in een pan, voeg de sjalot, bladselderij en sereh toe en breng ditsamen aan de kook. Snij de cassave in kleine stukjes en voeg deze toe aan debouillon. Laat de soep circa 20 minuten, afgedekt, zachtjes koken. Snij de peperdoormidden. Verwijder het kroontje, zaad en zaadlijsten. Snij de peper in dunneschuine reepjes. Voeg deze de laatste 10 minuten aan de soep toe. Verwijder desereh voor het serveren.

Variatie: voeg voor een iets mildere soep de laatste 10 minutentegelijkertijd met de peper 2 eetlepels verse grof geraspte kokos toe.

Dit gerecht bevat ruim 100 gram groente per persoon.

Lekker als voorgerecht bij een rijsttafel of Surinaams diner.
