Ingrediënten:
- 2 courgettes
- 2 1/2 dl melk
- 1 kleine ui
- 50 g bitterkoekjes
- 20 g geraspte kaas
- 20 g boter of margarine
- 15 g bloem
- nootmuskaat
- zout
Bereidingswijze
Verwarm de oven voor op 200 graden C. Breng in een pan ruim water met zoutaan de kook. Snij de courgettes in de lengte doormidden. Doe de courgettehelftenin de pan en laat ze 6-8 minuten zachtjes koken. Schep ze uit de pan in eenvergiet en spoel ze af met koud water. Droog de courgettehelften met een schonedoek of keukenpapier. Hol de helften met een lepel uit tot circa 1 cm van derand. Hou de courgettepulp apart. Smelt in een pan 15 gram boter of margarine.Roer de bloem door de boter of margarine, laat 1 minuut garen. Voeg de melk toeen roer tot een klontloos papje. Breng de saus op smaak met zout, peper ennootmuskaat. Roer de kaas door de saus. Pel en snipper de ui. Verhit in eenbraadpan de rest van de boter of margarine en bak de ui even aan. Kruimel debitterkoekjes fijn. Voeg aan de gebakken ui de courgettepulp toe. Bak deze evenmee. Roer de saus en de bitterkoekjes erdoor. Leg de uitgeholde courgettehelftenin een ingevette ovenschaal en vul ze met de saus. Laat de courgettes in de ovencirca 15-20 minuten gratineren tot de bovenkant goudbruin ziet.
Dit gerecht bevat ongeveer 200 gram groente per persoon.

Geschikt voor: vegetariërs (die wel melk producten eten),eiwitverrijkt dieet
Dieet variatietip: Neem bij glutenallergie glutenvrije bloem(meel) en glutenvrije koekjes. Volg je energiebeperkt dieet, neem dan mageremelk, 20+ kaas en bakproduct met minder vet in plaats van boter en maar 25g vanbitterkoekjes. Bij lactose intolerantie kun je voor sojamelk kiezen. De meestemensen met lactose intolerantie kunnen wel harde Nederlandse kazen eten; gaathet niet, dan kun je kaas evt. vervangen door een hardgekookt eitje.
