Ingrediënten:

  • 8 stronkjes roodlof
  • 1 sinaasappel
  • 8 teentjes knoflook
  • 2 liter groentebouillon
  • 100gr buikspek
  • 400gr roomboter
  • 1 eetlepel gehakte kruiden
  • eventueel 4 soepstengels
  • 1 citroen

Bereidingswijze

Knoflook pellen en zachtjes laten garen in ganzenvet. Spekjes uitbakken ineen droge koekenpan. De stronkjes roodlof samen met de bouillon, sinaasappel encitroen zachtjes gaarkoken. Daarna de sinaasappel en citroen eruit halen. Deroodlof met een staafmixer pureren. Dan de bouillon toevoegen en op smaak makenmet peper en zout. Als laatste de roomboter goed door de soep mengen voor dezachte smaak. De borden vullen met de knoflook, spekjes en gehakte kruiden. Desoep erop gieten en serveren met bijvoorbeeld een soepstengel.
