Frisse lente-ui soep met kokos

  • 10 lente-uitjes
  • 2 dl kokosmelk
  • ½ limoen
  • ¼ rode peper
  • 10 takjes koriander
  • 2 eetlepels suiker
  • 1 kruidenbouillontablet

Bereidingswijze

Maak de lente-uitjes schoon. Snij de donkergroene delen eraf en snij de restin grote stukken. Breng lente-ui met 5 dl water en het bouillontablet in eensoeppan aan de kook en laat 15 minuten afgedekt zachtjes koken. Hak intussen dekoriander fijn. Pers het sap uit de limoen. Verwijder de zaadjes van de peper ensnij de peper in ringetjes.

Neem de stukken lente-ui uit de pan en pureer in een blender met een scheutjevan de bouillon tot een gladde massa. Doe opnieuw in de kookpan met de rest vande bouillon, de kokosmelk en de peperringetjes en warm goed door. Voeg hetlimoensap toe en breng de soep op smaak met de suiker. Schenk de soep over 2borden en strooi er de koriander over.

Bevat per persoon 100 gram groenten + ¼ dl vruchtensap

 

Geschikt voor: vegetariërs, glutenvrij dieet,energieverrijkt dieet, eiwitverrijkt dieet

Dieet variatietip: Neem voor energiebeperking magere (soja)melk in plaats van kokosmelk. Suiker kun je desgewenst vervangen door zoetstof.
