Ingrediënten:
- 500 gram middelgrote aardappelen
- 2 groene paprika’s
- 1 flinke ui
- 2 tenen knoflook
- 1 citroen
- 2 takjes basilicum
- 4 eetlepels olijfolie
- 2 eetlepels sherryazijn
- vers gemalen zeezout en zwarte peper
- 2 (150 gr per stuk) haasbiefstuk
- 1 takje rozemarijn
Bereidingswijze
Boen de aardappels, kook ze in weinig water 12 minuten voor en giet ze af.Snijd de wat afgekoelde aardappels in vieren. Halveer de paprika’s, verwijdersteel en zaadlijsten. Snijd de paprika’s in smalle halve ringen. Verhit de grill(oven, tafel) of barbecue voor. Snijd de ui in dunne schijven en duw de ringenlos. Hak 1 teen knoflook fijn, halveer de tweede. Boen de citroen schoon en rasp1 theelepel schil af. Snijd de basilicumblaadjes in reepjes.
Roer een marinade van 1 eetlepel (groene) olijfolie, sherryazijn, citroenrasp,fijngehakte knoflook en basilicum. Schep de biefstukken hiermee om. Verhit 2eetlepels olie in een wok of kleine braadpan. Bak hierin, onder af en toeomscheppen, de aardappels goudbruin en gaar in 15 minuten. Voeg na 10 minuten dehalve knoflooktenen toe. Stroop op het laatst de rozemarijnnaaldjes boven de panaf. Breng de aardappels op smaak met wat zout. Verhit 2 eetlepels olie in eentweede wok of kleine braadpan. Schep de paprika en uiringen hierin en bak zeheel zachtjes in 15-20 minuten helemaal gaar en een beetje gekarameliseerd.Rooster de gemarineerde biefstukken in 3-5 minuten (afhankelijk van de dikte,reken op 1 minuut per 1/2 cm dikte) aan beide kanten mooi bruin en nog rozé vanbinnen. Breng ze pas aan tafel op smaak met zout en peper. Serveer debiefstukken met gesmoorde paprika en gebakken aardappels.
