Gestoofde aardappel in kruidige kokoscurrysaus

Ingrediënten:

  • 500 g vastkokende aardappels
  • 200g bloemkool
  • ca. 3 dl kokosmelk
  • 1 ui
  • 1 bosje verse koriander
  • ca. 70 g tomatenpuree
  • 2 eetlepels zonnebloemolie
  • 1 theelepel sambal
  • 1 theelepel kerrie
  • 1/2 theelepel komijnpoeder of djinten
  • 1/2 theelepel kaneel

Bereidingswijze

Schil de aardappels en snij ze in stukken. Pel de ui en snij deze inringen.Verhit de olie in een wok. Voeg sambal, komijnpoeder, kerrie en kaneeltoe. Fruit dit ca. 1 minuut zachtjes op een heel laag vuur. Voeg de uiringen toeen fruit ze zachtjes ca. 2 minuten. Voeg de tomatenpuree toe en bak dit zachtjes1 minuut mee. Doe de aardappelstukken met de kokosmelk in de wok (aardappel moetnet onder staan). Breng het aan de kook en laat de aardappels op een laag vuurin 15 – 20 minuten beetgaar stoven. Was en snij ondertussen de bloemkool. Kookde bloemkool roosjes in ca. 10 minuten gaar. Schep af en toe om. Hak dekorianderfijn en bestrooi het aardappelgerecht ermee. Serveer de bloemkool erbij

Per persoon ca. 200 gram groente

Lekker met een stukje gegrilde kip.
