Gestoomde scholrolletjes met lamsoren en zalm

Ingrediënten:

  • 50 g lamsoren
  • klontje boter of 1 eetlepel olijfolie
  • 125 ml crème fraîche
  • zout
  • peper
  • 1 eetlepel fijngeknipte dille
  • 50 g gerookte zalm
  • 3-4 scholfilets van ca. 100 g
  • 1/2 dl droge witte wijn
  • 1 eetlepel Noilly Prat
  • Pernod of Ouzo

Bereidingswijze

Dieet: Glutenvrij dieet, Kippenei vrij dieet.

Zoek de lamsoren uit, was ze en hak ze grof. Verhit in een koekenpan hetklontje boter of de olijfolie en bak de lamsoren 1 minuut om en om. Druk hetvocht eruit en roer door de lamsoren 1 theelepel créme fraiche, zout, peper n1/2 eetlepel fijngeknipte dille. Snij de zalm in 4 lange plakjes ter grootte vande scholfilets. Leg de scholfilets plat op het werkvlak, bestrooi ze met zout enpeper, leg de plakjes zalm erop en verdeel de lamsoren erover. Strijk devullineg glad, rol de visfilets op en zet ze vast met een cocktailprikker. Legde visrolletjes in een beboterd stoommandje en stoom ze gaar in 12 – 14 minuten.Laat de vis 2 – 3 minuten rusten. Breng voor de saus de rest van de crémefraiche met de witte wijn en eventueel Noilly Prat, Pernod of Ouzo aan de kooken laat de saus wat inkoken. Breng op smaak met de rest van de dille, zout enpeper. Serveren met gekookte krielaardappeltjes en extra roergebakken 250 gramlamsoren (in een eetlepel olijfolie 2-3 minuten).

Variatie: neem tongfilet in plaats van scholfilet.

Per persoon ongeveer 25 gram groenten
