Ingrediënten:
- 2 kleine uien
- 2 rode paprika’s
- 150 g rundergehakt
- 3 augurken
- 1/2 theelepel djinten
- 250 g gezeefde tomaten
- 1/2 dl rode wijn
- 50 g schone knolselderij
- 50 g wortel
- 1 teentje knoflook
- 1 eetlepel olijfolie
- 1 theelepel oregano
- kaneel
- 1 laurierblad
- 1 theelepel paprikapoeder
Bereidingswijze
Dieet: Kippeneivrij dieet, Glutenvrij dieet, Lactosevrij dieet.
Warm de oven voor op 200 C.
Pel en snipper één ui. Snij de wortel en knolselderij in blokjes. Verhit deolijfolie in een braadpan en bak de ui glazig. Voeg de wortel en knolselderijtoe. Pers het teentje knoflook erboven uit. Voeg de paprikapoeder toe. Bak degroenten ongeveer 4 minuten mee. Blus af met de wijn. Voeg de gezeefde tomaten,laurierblad, oregano en een snufje kaneel toe. Laat de saus met het deksel op depan ongeveer 20 minuten zachtjes sudderen. Pel en snipper intussen de andere ui.Hak de augurken fijn. Maak de gehakt aan met djinten, zout en peper. Meng de uien augurk erdoor. Snij het kapje van de bovenkant van de paprika’s. Verwijder dezaadlijsten, maar hou de paprika’s heel. Vul de paprika’s met het gehaktmengselen zet het kapje erop. Vet een ovenschaal in. Breng de tomatensaus op smaak metzout en peper. Verwijder het laurierblad. Giet de tomatensaus in de ovenschaalen zet de paprika’s erin. Dek de schaal af met een deksel of met aluminiumfolie.Bak de paprika’s gaar in de oven ca. 45 minuten.
Per persoon ongeveer 250 g groenten
Lekker met rijst en een groene salade.
