Ingrediënten:

  • 4 eieren
  • 4 eetlepels melk
  • 150 g gare sperziebonen
  • 3 worteltjes
  • 1 ui
  • 1/2 rode paprika
  • 25 g geraspte kaas
  • 30 g boter of margarine
  • zout
  • peper
  • 4 sneetjes donker brood

Bereidingswijze

Dieet: Vegetarisch dieet, Vezelrijk dieet.

Pel en snipper de ui. Snij de paprika in reepjes en de worteltjes in plakjes.Verhit de helft van de boter of margarine in een koekenpan en bak de ui met deworteltjes en paprika. Klop de eieren los met melk, zout en peper. Schep er deboontjes en de andere groenten door. Verhit de rest van de boter of margarine indezelfde koekenpan en giet het ei-groentemengsel erin, strooi er de gerasptekaas over. Bak de omelet zachtjes gaar en bruin in 15 – 20 minuten.

Per persoon ongeveer 150 gram groenten

Lekker met donkerbrood of aardappelen.
