Ingrediënten:

  • 1 aubergine
  • olijfolie
  • 2 theelepels pesto
  • 100 – 150 g geitenkaas
  • 2 Italiaanse bollen

Bereidingswijze

Was de aubergine en snij een plakje van de bovenkant. Snij de aubergine in delengte in dunne plakken. Besmeer de aubergineplakken met (olijf)olie. Verwarm degrillpan en bak de plakken aan beide kanten lichtbruin. Snij de Italiaansebollen doormidden. Besmeer de onderste helften van de broodjes met de pesto.Verdeel de plakken aubergine en plakjes of blokjes geitenkaas erover. Leg debovenste helft van de broodjes erop.
