Ingrediënten:

  • ca. 250 g kastanjechampignons
  • 1 sjalotje
  • 1 eetlepel olijfolie of boter
  • 4 dl bouillon van een blokje
  • 1 eetlepel fijngesneden bieslook
  • 1 scheutje slagroom
  • peper
  • zout

Bereidingswijze

Maak de kastanjechampignons schoon en hak ze fijn. Pel de sjalot en snij dezeklein. Verhit een scheutje olie in een wok of koekenpan. Bak de champignonssamen met de sjalot even in de olie. Giet de bouillon erbij en laat het geheeleventjes doorkoken. Pureer dit met een staafmixer en breng het op smaak metpeper en zout. Er ontstaat dan een gebonden soep. Maak de soep af met eenscheutje slagroom en strooi de gesneden bieslook erop.

Lekker met stokbrood.
