Ingrediënten:
- 2 kiwi’s
- 150 g gare kipfilet in blokjes gesneden
- 4 gare asperges
- 1 sinaasappel
- 25 g gesnipperde amandelen
- 2 eetlepels olie
- 1 eetlepel wijnazijn
- zout
- peper
Bereidingswijze
Schil de kiwi’s en snij de vruchten in plakjes. Schil de sinaasappel als eenappel dik tot op het vruchtvlees. Snij met een scherp mesje de partjes tussen devliezen uit. Doe dit boven een kom en vang het sap op. Snij de asperges instukjes van 3 cm. Maak in een kommetje een dressing van olie, azijn, opgevangensinaasappelsap, zout en peper. Meng in een saladekom: kip, kiwi,sinaasappelpartjes en asperges voorzichtig door elkaar. Verdeel de salade over 2bordjes. Sprenkel de dressing over de salade. Strooi tenslotte de amandelen erover.
Per persoon ongeveer 50 gram groenten en 50 g fruit

Dieet variatietip: Amandelen kun je vervangen doorhazelnoten of geraspte kaas, als je helemaal geen noten mag. Volg je eenenergiebeperkt dieet? Neem dan 0,5 eetlepel olie en 2 eetlepels azijn voor dedressing. Doe er geen amandelen bij.
