Ingrediënten:
- 1 kleine struik paksoi of 1/2 grote
- 2 cm verse gemberwortel
- 1/2 rode peper
- 3 eieren
- 8 eetlepels maizena
- zout
- 4 eetlepels sinaasappelsap
- 2 eetlepels lichte sojasaus
- frituurolie of ca. 3 dl olie
Bereidingswijze
Dieet: Vegetarisch dieet, Lactose vrij dieet, Glutenvrij dieet.
Was de paksoi, maak de bladen los en snij het groene blad los van de stelen.Snij de stelen zonodig iets bij tot ‘bakjes. Snij het blad in brede repen. Schilde gember en pers hem (met de knoflookpers) uit boven een kommetje. Snij dehalve peper (al dan niet met zaadjes) in kleine stukjes. Splits de eieren. Klopde dooiers los met 3 eetlepels gezeefde maïzena en wat zout. Klop de eiwittenstijf en spatel die door het dooiermengsel. Roer de peperstukjes, sinaasappelsapen sojasaus door het gembersap tot een sausje. Verhit de frituurolie tot ca. 170graden C (of verhit ca. 3 dl olie in een wok). Haal de paksoistelen eerst doorde maizena, daarna door het eimengsel. Frituur ze met 2 – 3 stuks tegelijk in 3- 4 minuten goudbruin en krokant. Haal met een vork (of suikertang) kleinebundeltjes paksoireepjes door het eimengsel en frituur ze in gedeelten krokant.Laat de groente uitlekken op keukenpapier en serveer ze warm met het sausje.
