Ingrediënten:
- 250 g sperziebonen
- 1 citroen
- 50 g bloem
- selderij
- zout
- versgemalen peper
- 1 ei
- frituurolie
Bereidingswijze
Dieet: Vegetarisch dieet, Lactosevrij dieet, Natriumbeperkt dieet
Maak de sperziebonen schoon en laat ze heel. Dep ze goed droog. Boen decitroen schoon en rasp de schil af op een fijne rasp. Zeef de bloem boven eenkom, meng er zout, peper en citroenrasp door en maak een kuiltje in het midden.Splits het ei en doe de dooier in het kuiltje. Voeg scheutje voor scheutje ca. 11/2 dl water toe en roer tot een glad beslag ontstaat. Laat het beslag ca. 30minuten rusten. Verhit de frituurolie tot ca. 180 graden C. Klop het eiwit stijfen spatel het door het beslag. Wentel de sperziebonen door het beslag en bak zein kleine porties in 3 a 4 minuten goudbruin. Laat ze uitlekken op keukenpapier.
Per persoon ongeveer 100 gram groenten
Serveer met (verse) tomatensaus en/of citroensap
