Macaronisalade met geroosterde paprika’s en feta

Ingrediënten:

  • 3 paprika’s (1 rode, 1 gele en 1 groene)
  • 1 uitje
  • 10 gram verse koriander
  • 150 gram feta
  • 150 gram eiermacaroni
  • zeezout en zwarte peper
  • 6-10 zwarte olijven
  • 1 deciliter tomatendressing

Bereidingswijze

Verwarm de ovengrill 10 minuten voor. Breng in een waterkoker 11/2 literwater aan de kook. Snijd van de paprika’s de steelaanzet rondom weg, verwijderde zaadlijsten. Zet de paprika’s met de opening naar beneden in een ovenschaal.Snipper het uitje. Pluk het korianderblad af en snijd het fijn. Verkruimel defeta.

Zet de ovenschaal met paprika’s op de tweede richel onder de grill en roosterde paprika’s zwart in 10 – 15 minuten. Laat ze wat afkoelen. Strooi de macaroniin een kookpan, schenk het kokende water erop, roer om en breng het wateropnieuw aan de kook. Voeg desgewenst 1 theelepel zout toe en kook de macaronibeetgaar in 12 minuten. Stort de macaroni in een vergiet en spoel ze koud onderstromend koud water. Pel de paprika’s. Snijd het vruchtvlees in vierkantestukjes. Meng in een kom de macaroni met de paprika, uisnippers, bijna allekoriander en de dressing. Verdeel de salade over twee borden. Strooi defetakruimels en de rest van de koriander erover. Leg de olijven erbij. Strooi erzout en peper naar smaak over.
