- 3 mango’s
- ca. 250 ml chilisaus
- 150 g bruine basterdsuiker
- 150 g verse dadels
- 3 eetlepels citroensap
- 2 theelepels kaneel
- sambal oelek
- kruidnagelpoeder
- zout
Bereidingswijze
Schil de mango’s en snij het vruchtvlees van de pit af. Snij het vruchtvleesin stukken. Verwijder de pitten uit de dadels. Snij de dadels in stukjes. Doehet volgende in een pan: de helft van de mango, dadels, citroensap, chilisaus,iets sambal, snufje kruidnagelpoeder, kaneel, basterdsuiker en 1,5 dl water.Breng alles al roerende aan de kook. Laat het mengsel met een deksel op de pan30 minuten zachtjes pruttelen. Roer af en toe. Was intussen potjes en dekselsgoed schoon met heet sodawater. Spoel de potjes met heet water goed na. Laat depotjes omgekeerd op een schone doek uitlekken. Roer na 30 minuten de anderehelft van de mango door de chutney. Maak de chutney op smaak met zout en suiker.Vul de potjes tot aan de rand met warme chutney. Sluit de potjes af met eendeksel en laat ze omgekeerd afkoelen. Bewaar de potjes op een zeer koele plaatsof in de koelkast.
Houdbaarheid ca. 3 maanden. Na opening in de koelkast bewaren.
