Ingrediënten:
- 2 zoete puntpaprika’s (bijvoorbeeld Ramiro)
- 125 gram couscous, klaargemaakt volgens verpakking
- 3 eetlepels fijngesneden, verse mint
- 3 eetlepels fijngesneden, verse koriander
- 1 kleine, rode ui, fijngesneden
- 25 gr. geroosterde pijnboompitten
- 25 gr. rozijnen
- 10 gedroogde abrikozen, in stukken gehakt
- 1 theelepel komijn
- 1 citroen, het sap en fijn gemalen schil
- zout
- vers gemalen zwarte peper
- 1 eetlepel olijfolie
Bereidingswijze
Verwarm de oven voor op 220°C. Bereid de paprika’s door ze voorzichtig in delengterichting door de helft te snijden. Verwijder de steel en de zaadjes. Doede met water gewelde couscous in een grote schaal en roer de mint, koriander,rode ui, rozijnen, pijnboompitten, abrikozen, komijn, citroenschil en citroensapdoor elkaar. Voeg zout en peper naar smaak toe. Schep deze mix in de paprika’stotdat ze goed gevuld zijn. Wrijf de olijfolie voorzichtig over de buitenkantvan de paprika’s en zet ze in een ovenschaal. Zet deze ongeveer 20 tot 25minuten in een voorverwarmde oven. Controleer na 15 minuten. Als de couscous tedonker wordt, dek de paprika’s dan af met aluminiumfolie.
