Ingrediënten:
- 125 g couscous
- 2 1/2 dl krachtige groentebouillon
- 1 dl krachtige groentebouillon voor de pakketjes
- 1 eetlepel olijfolie
- 1 kleine ui
- sap en rasp van 1/2 sinaasappel
- 30 g rozijnen
- 1 eetlepel gehakte walnoten en 1 eetlepel voor de pakketjes
- zout
- peper
- 6 middelgrote paksoistelen
- 15 g boter of margarine
Bereidingswijze
Doe de couscous in een schaal. Schenk de kokende bouillon erop en laat decouscous, afgedekt, 20 minuten wellen. Verhit de olijfolie. Pel de ui en snijdeze in repen. Bak de ui in de olie glazig en schenk het sinaasappelsap (ca. 1/2dl ) erbij. Voeg de rozijnen toe en kook de vloeistof tot de helft in. Schep decouscous erdoor met de gehakte walnoten, de rasp van de halve sinaasappel, zouten peper naar smaak. Blancheer de paksoi met de stelen naar beneden 2 – 3minuten in ruim kokend water. Spoel ze af met koud water en leg ze op een schonetheedoek. Verdeel de vulling over het midden van de bladeren, sla de zijkantennaar binnen en rol ze vanaf de steel op. Leg de pakketjes in een braadpan.Schenk er 1 dl groentebouillon bij en kook de pakketjes bijtgaar op een laagvuur in 5-8 minuten. Rooster de overige eetlepel gehakte walnoten in de boter ofmargarine en strooi deze over de pakketjes.
