Ingrediënten:

  • 2 grote geroosterde en ontvelde rode paprika’s
  • 1 grote geroosterde en ontvelde gele paprika
  • 200 g bloem
  • 11/2 tl fijn zeezout
  • 2 tl bakpoeder
  • 1/2-1 tl pikante paprikapoeder
  • (5-6 el fijngesneden bladpeterselie)
  • 6 grote eieren
  • 75-100 g geraspte oude boerenkaas

Bereidingswijze

Snijd de paprika’s in blokjes. Zeef de bloem met zout, bakpoeder enpaprikapoeder (en eventueel de peterselie) in een kom. Klop in een andere kom deeieren los. Voeg de olie toe en klop alles goed door elkaar. Spatel dan hetbloemmengsel erdoor samen met de paprika’s en kaas. Schep het beslag in eeningevette en met bakpapier beklede cakevorm en bak de cake circa 50 min. in hetmidden van een voorverwarmde oven op 200°C. tot hij goudgeel en gaar is. Laat decake iets afkoelen, verwijder dan de vorm en het bakpapier en laat de cake opeen rooster verder afkoel
