Ingrediënten:
- 4 sjalotten, fijngesneden
- 5 oranje paprika’s, in blokjes
- 250 g tomaten, in stukken
- 2 takjes tijm
- 1 blaadje laurier
- 6 dl groente- of kippenbouillon
- 2 el crème fraîche, losgeklopt
- 2 el fijngesneden basilicum of bladpeterselie
Bereidingswijze
Bak de sjalot en paprika 6-8 min. in de olie. Voeg tomaten, tijm, laurier enbouillon toe en kook alles circa 20 min. op zacht vuur tot de groenten zachtzijn. Pureer de soep en zeef hem eventueel. Breng op smaak met zout en peper.Schep aan tafel een schepje crème fraîche door de soep. Bestrooi met basilicum.
Kaaskletskoppen
Door de hitte smelt de geraspte kaas aan elkaar tot prachtige krokantekoekjes. Voor 6 – 8 stuks: meng 125 g geraspte oude boerenkaas met 1 tlgedroogde tijmblaadjes. Leg op ruime afstand van elkaar eetlepels kaasmengsel opeen met bakpapier beklede bakplaat. Verdeel het mengsel tot een cirkel, zorg dater geen gaten tussen de kaas vallen. Bak de kaaskletskoppen 8-12 min. in eenvoorverwarmde oven op 175°C tot ze krokant en goudgeel zijn. Laat ze ietsafkoelen en neem ze dan met een pannenkoekmes van de bakplaat. Laat ze op eenstuk bakpapier verder afkoelen.
Lekker met een kaaskletskop van oude boerenkaas.
