Ingrediënten:

  • 650 g witte asperges
  • 200 g geroosterde achterham
  • 1 courgette
  • 100 g Parmezaanse kaas
  • 400 g pennerigate
  • 20 g roomboter
  • ca. 125 ml slagroom
  • ca. 125 ml crème fraîche
  • zout
  • versgemalen zwarte peper

Bereidingswijze

Schil de asperges en snij ca. 3 cm van de onderkant af. Snij elke asperge indrieen en houd de kopjes apart. Kook de aspergestukjes in een pan met ruim waterin 4 – 6 minuten net gaar. Voeg de kopjes na ca. 1 minuut toe en kook ze mee.Snij intussen ham in reepjes, was de courgette en snij deze in blokjes. Schaafmet een kaasschaaf de kaas in dunne flinters. Giet de asperges af laat ze goeduitlekken. Kook in een pan met ruim water en zout de penne beetgaar volgensgebruiksaanwijzing op de verpakking. Smelt intussen in een ruime pan de boter.Bak de stukjes courgette in de pan al omscheppend ca. 4 minuten. Voeg dehamreepjes toe en bak deze zachtjes ca. 1 minuut mee. Schep de asperges ervoorzichtig door en warm het ca. 1 minuut mee. Roer slagroom en crème fraîcheerdoor en laat de saus in ca. 30 seconden goed doorwarmen. Breng op smaak metzout en peper. Giet de penne af. Laat goed uitlekken en schep de penne door desaus. Strooi er de kaas flinters over en serveer direct.
