Pittige fruit spring rolls

  • 8 plakken fillodeeg (diepvries)
  • 1 appel
  • 40 gram rozijnen
  • 2 theelepels ketoembar
  • 1/2 limoen
  • 2 eetlepels vloeibare margarine
  • 1 banaan
  • 40 gram gepelde walnoten
  • 1/2 rode peper
  • 3 eetlepels geraspte kokos
  • 2 eetlepels vloeibare honing

Bereidingswijze

Warm de oven voor op 200 graden. Laat de plakken fillodeeg ontdooien volgensde aanwijzing op de verpakking. Pel de banaan.

Snijd de banaan in stukjes. Schil de appel, verwijder het klokhuis en snijdde appel in stukjes. Doe appel met banaan in een kom. Hak de walnoten grof. Voegwalnoten en rozijnen toe aan het fruit. Verwijder de pitjes uit de peper en hakde peper zijn. Schep de peper, ketoembar en kokos door het fruit. Pers de limoenuit en voeg het sap samen met de honing toe aan het fruit. Schep goed doorelkaar.

Bestrijk telkens 1 plak fillodeeg met de margarine en leg er een tweede plakop. Rol telkens 1/4 van het vruchtenmengsel in het deeg. Sla hierbij halverwegehet oprollen de zijkanten van het deeg naar binnen en rol de spring roll verderop. Maak zo 4 spring rolls en bestrijk deze met nog wat margarine. Maak de rollskleiner wanneer je deze als tussendoortje of hapje serveert. Bekleed eenbakplaat met bakpapier en bak de rolls in 15 – 20 minuten goudbruin en krokant.

Tip: Hou je niet van pittig, laat dan de peper achterwege. Ook heerlijk metverse munt.
