- 400 g pompoen (of: 250 g schoongemaakt)
- 250 g spruitjes (of: 200g schoongemakt)
- 25 g boter of margarine
- 1 – 2 theelepels kerriepoeder

Bijgerecht voor 2 personen
Schil de pompoen, verwijder zaad en vocht en snij het vruchtvlees in blokjes.Maak de spruitjes schoon en was ze. Verhit de boter of margarine in een braadpanen voeg de pompoen, spruitjes en kerriepoeder toe. Laat de groenten enkeleminuten zachtjes bakken. Voeg een klein beetje water of groentebouillon (van eentablet)toe en laat de groenten met het deksel op de pan in 10-13 minuten gaarworden. Schep de groenten af en toe om. Voeg eventueel nog een beetje water toe.
Als je schoongemaakte spruitjes koopt, is 200 gram voldoende. 400 grampompoen levert circa 250 gram schoongemaakt op.
Vegetarische variatie: met een notenburger en gekookte aardappels.
Dit gerecht bevat ruim 200 gram groente per persoon.

Geschikt voor: vegetariërs, glutenvrij dieet, natriumbeperktdieet, vezelverrijkt dieet, energiebeperkt dieet
Dieet variatietip: Serveer voor energie- of eiwitverrijkingeen gebonden sausje van bijvoorbeeld kaas erbij en voeg eventueel noten ofpijnboompitten toe. Voor juist extra energiebeperking neem maar 10g boter voorhet bakken.
Lekker met gehakt en gekookte aardappels.
