Ingrediënten:
- 2 portobello’s of 4 reuzechampignons
- 50 g mager spek in reepjes
- 2 eieren
- 1 theelepel fijngehakte peterselie of bieslook
Bereidingswijze
Warm de oven voor op 200 graden. Veeg de portobello’s schoon en snij destelen uit de hoeden. Hak de stelen fijn. Bestrijk de portobello’s met olie enleg deze op een ingevette bakplaat. Schuif de portobello’s ca. 10 minuten in deoven. Bak de reepjes spek in een koekenpan bijna knapperig. Bak de fijngehaktechampignonstelen even mee. Klop in een kom de eieren met zout, peper enfijngehakte peterselie los. Schenk het eimengsel bij de spekjes in de pan enlaat het ei al roerende langzaam stollen. Neem de portobello’s uit de oven. Vulde portobello’s met het roerei en snij ze doormidden. Ook lekker alsvoorgerecht.
