Ingrediënten:
- 250 g pruimen
- 1 sinaasappel
- 2 bollen (walnoten)ijs
- 2 eetlepels sinaasappellikeur
- 2 eetlepels geschaafde amandelen
- 1 zakje vanillesuiker
Bereidingswijze
Was de pruimen, halveer ze en verwijder de pit. Snij de halve pruimen nog eenkeer door. Boen de sinaasappel schoon en rasp er 1 theelepel oranje schil af.Pers de sinaasappel uit. Roer in een kom het sinaasappelsap met de likeur, degeraspte schil en de vanillesuiker door elkaar. Schep de pruimen erdoor. Laat desalade minstens een kwartier (in de koelkast) staan, zodat de smaak zich kanontwikkelen. Rooster de amandelen in een droge koekenpan goudbruin. Schep depruimensalade in twee wijde schaaltjes. Schep in het midden een flinke bolwalnotenijs en strooi de amandelen eroverheen.
Per persoon ongeveer 100 g fruit

Dieet variatietip: Volg je energiebeperkt dieet? Neem danvruchtensorbet ijs. Suiker kun je desgewenst vervangen door zoetstof. Neem maar1 eetlepeltje amandelen.
