  • 125 gram snelkook couscous
  • 2 lente-uitjes of sjalotjes
  • 10 takjes verse koriander
  • 1/2 ananas (of uit een blikje)
  • 1/2 – 1 eetlepel red curry pasta (uit een potje)
  • olijfolie
  • 1/2 rode paprika
  • 75 gram cashewnoten

Bereidingswijze

Wel de couscous volgens de aanwijzing op de verpakking.

Maak de lente-uitjes schoon en snijd ze in ringetjes of snipper desjalotjes. 
Was de paprika, verwijder de zaadlijsten en snijd de paprika in dunne reepjes.Hak de koriander fijn. Hak de cashewnoten grof. Schil de ananas dik, verwijderde harde kern en snijd het vruchtvlees klein.
Verwarm 1 eetlepel olijfolie zachtjes op een laag vuur in een koekenpan. Bak delente-ui zachtjes 1 minuut in de olie en meng er de red curry pasta door.Fruit circa 1 minuut. Meng alle ingrediënten goed door elkaar. Je kunt de saladedirect lauwwarm serveren of een uur laten staan en dan koud serveren. 

Serveertip: Vul een kommetje mt de helft van de salade. Druk het aan met debolle kant van een lepel en stort het op een bordje zodat een mooi gevormdbergje couscoussalade ontstaat. Doe hetzelfde op een tweede bordje. Schep derest van de salade er omheen.

Dit gerecht bevat ruim 100 gram fruit per persoon.

Vervang de ananas of een gedeelte door stukjes ontvelde sinaasappel. Serveer eventueel met stukken brood.
