  • 5 st. oranje paprika
  • 1st. knolselderij
  • 5 gr. Agar agar (te koop bij toko)
  • 200 gr. Kalfsfricandeau
  • Gemengde sla
  • Sladressing

Bereidingswijze

Snij de schil van de knolselderij en snij hem in kleine stukjes. Kook deknolselderij gaar in water en melk. Als de selderij gaar is afgieten, goeddroogstomen en met een klontje roomboter fijndraaien in de keukenmachine. Brengde puree op smaak met peper en zout en zet hem in de koelkast. Draai 4 paprika’sfijn in de keukenmachine en laat de massa uitlekken in een zeef.

Doe 2 dl. van het uitlekvocht in een steelpannetje en kook dit op. Zodra hetkookt de agar agar toevoegen en tijdens het doorroeren 2 minuten doorkoken. Giethet vocht in een schaal of op een plat bord en zet dit in de koelkast. Snij deovergebleven paprika in kleine stukjes en doe dit door de knolselderijpuree.Haal de paprika uit de schaal en snij repen van 10 centimeter. Verdeel de pureeover de paprikastroken en rol ze op. Serveer de rolletjes met wat frisse saladeen de kalfsfricandeau
