Ingrediënten:
- 250 g sperziebonen
- ca. 70 g aardbeien
- 1/2 citroen
- 25 – 50 g grof geraspte pecorino
- 1 bosuitje
- 1/2 klein bosje verse munt
- 1 eetlepel olijfolie extra vierge
- zout
Bereidingswijze
Kook de sperziebonen in ca. 10 minuten beetgaar. Was de aardbeien, halveerze, verwijder het kroontje en snij ze in vieren. Giet de sperziebonen af enspoel ze onder koud stromend water om de kleur te behouden. Was de citroen enrasp de schil met een citroenrasp. Pers de citroen. Klop de olijfolie door hetcitroensap. Meng deze dressing en citroenrasp door de nog warme sperziebonen.Schep de aardbeien door de sperziebonen. Hak de bosui en de munt fijn. Strooibosui en munt over de bonen en serveer er de pecorino apart bij.

Geschikt voor: vegetariërs (die wel kaas eten), glutenvrijdieet, vezelverrijkt dieet, energieverrijkt dieet, energiebeperkt dieet,eiwitverrijkt dieet
Dieet variatietip: Peccorino (bevat lactose) kun jeuiteraard weglaten, maar je kunt hem ook vervangen door bijvoorbeeldfijngemalen noten (geschaafde amandelen) of pijnboompitten. Je kunt het proberente vervangen door een Nederlandse harde kaas (bijvoorbeeld Goudse). De meestemensen met lactose intolerantie kunnen wel harde Nederlandse kazen eten.
