Ingrediënten:
- ca. 200 rode en/of blauwe bessen
- 4 eieren
- 20 g suiker
- 1 zakje vanillesuiker
- klein klontje margarine
- poedersuiker
- eventueel 2 eetlepels cassislikeur
Bereidingswijze
Dieet: Vegetarisch dieet, Glutenvrij dieet, Lactosevrij dieet.
Was de bessen en verwijder de steeltjes. Splits de eieren. Klop de dooiersmet de suiker en de vanillesuiker dik en schuimig. Klop de eiwitten stijf. Schepde stijfgeklopte dooiers (samen met de likeur) voorzichtig door het eiwit.
Verhit de margarine in een koekenpan. Schenk het eimengsel in de pan en legeen deksel er op. Verhit de omelet even flink. Verwarm de omelet daarna zachtjestot deze stevig is geworden. Laat de omelet op een bord glijden en snij dezevoorzichtig doormidden. Leg de halve omeletten op 2 kleine bordjes en verdeel debessen er over. Sla helften van de omelet voorzichtig net niet op de helftdubbel. Bestrooi de omelet met poedersuiker. Serveer direct.
