Ingrediënten:

  • 200 g groene asperges
  • 1/2 geschilde komkommer
  • 1/4 meloen
  • 3,5 dl krachtige groentenbouillon
  • 2 eetlepels fijngeknipte dille
  • paar blaadjes fijngeknipte citroenmelisse of munt
  • paar druppels limoensap of citroensap of ouzo of pastis

Bereidingswijze

Schil de onderkant van de asperges en snij ze vervolgens in stukken. Houd depunten achter en doe deze over in een magnetronbestendige schaal met 1 eetlepelwater. Zet de schaal, afgedekt, 1-2 minuten, ca. 750 watt in de magnetron. Haalmet een aardappel- of meloenboor 6-9 mooie bolletjes uit de meloen voorgarnering(of snij blokjes). Houd deze afgedekt achter. Halveer de komkommer enverwijder het zaad. Rasp de komkommer met een handrasp of in de keukenmachine.Voeg de komkommer en de bouillon toe aan de asperges in de schaal.

Breng alles aan de kook in de magnetron, afgedekt, 5-6 minuten, ca. 750 watten laat de soep zachtjes koken. Pureer de soep met een staafmixer of indemengbeker en laat de soep afkoelen. Roer de fijgeknipte tuinkruiden door deafgekoelde soep. Breng de soep op smaak met zout, peper en limoen of citroensap,ouzo of pastis. Serveer de soep, gegarneerd met de aspergepunten,meloenbolletjes en een blaadje munt of citroenmelisse.

Per persoon ca. 175 g groenten en 50 g fruit.

Geschikt voor: vegetariërs, glutenvrij dieet, energiebeperktdieet

Dieet variatietip: Serveer er voor vezelverrijkingvolkorenbroodjes bij. Voor natriumbeperking kun je gebruik maken van eennatriumarm bouillon tablet.
