Ingrediënten:
- 400 g sperziebonen
- zout of zeezout
- 1 – 2 eetlepels ongezoete tahin (sesampasta)
- 1 1/2 eetlepel citroensap
- 1 teentje knoflook
- versgemalen peper
- 2 eetlepels platbladige peterselie
- 1 eetlepel koriander
Bereidingswijze
Dieet: Vegetarisch dieet, Kippeneivrij dieet, Glutenvrij dieet.
Maak de sperziebonen schoon en halveer ze. Doe ze in een stoommand ofhittebestendig vergiet met wat zout.
Breng een grote pan met ruim water aan de kook en stoom de sperziebonen in 10- 12 minuten beetgaar. Roer intussen de tahin goed los met een of twee eetlepelslauwwarm water en het citroensap. Pers de knoflook erboven uit en breng op smaakmet zout en peper. Meng de gare boontjes, fijngeknipte peterselie enfijngeknipte koriander door het tahinmengsel. Serveer lauwwarm of koud.
Variatie met vlees: lekker met gehaktballetjes.
Dit gerecht bevat 200 gram groente per portie.
Lekker met aardappel- of couscoussalade en gegrilde plakken feta.
