Ingrediënten:
- 1 ui
- 1 eetlepel zonnebloemolie
- 175 g gehakt of vegetarisch gehakt
- 100 g gemengde paddestoelen
- 1 zakje tacokruiden
- 4 taco schelpen
- 1 avocado
- 1 teentje knoflook
- 1 dl zure room
- peper
- zout
- 100 g geraspte oude kaas
Bereidingswijze
Verwarm de oven voor. Pel en snijd de ui in stukjes.
Verhit de olie in een koekenpan of wok en bak daarin de ui tot deze glazigis. Voeg het (vegetarische) gehakt toe en bak dit ongeveer 2 minuten mee. Maakde paddestoelen schoon en scheur ze in stukken. Doe de paddestoelen ook in depan, schep om en bak de paddestoelen ook 2 minuten mee. Voeg de tacokruiden toeen laat het op laag vuur 5 minuten sudderen.
Verwarm de taco’s in de voorverwarmde oven. Pers het teentje knoflook uit.Snijd de avocado doormidden en verwijder de pit. Schil de avocado en pureer (ineen keukenmachine of met een staafmixer) het vruchtvlees met de zure room,knoflook, zout en peper. Vul de taco’s met de vulling, bestrooi met kaas en geefde avocadosaus erbij.Vervang eens de paddestoelen door champignons uit blik ofglas (uitlekgewicht 115 gram).
Per persoon ongeveer 30 gram groenten en 50 gram fruit
