Ingrediënten:
- 4 tomaten
- 1/2 komkommer
- 1 stengel bleekselderij
- 6 radijsjes
- 1 citroen
- 1 eetlepel olijfolie
- 1 eetlepel fijngehakte peterselie
- zout
- versgemalen peper
- 3 eetlepels yoghurtmayonaise
Bereidingswijze
Dieet: Vegetarisch dieet, Glutenvrij dieet, Lactosevrij dieet.
Was de tomaten en komkommer en snij ze in stukjes. Schil de bleekselderij meteen dunschiller en snij de stengel in dunne plakjes. Maak de radijsjes schoon ensnij ze ook in plakjes. Boen de citroen schoon en rasp de gele schil eraf. Persde citroen uit. Roer in een schaal 1 eetlepel citroensap met de helft van degeraspte schil, de olijfolie en peterselie tot een sausje. Schep de groenteerdoor. Voeg wat zout en peper naar smaak toe.
Laat de salade minstens een kwartier staan. Roer in een ander schaaltje deyoghurtmayonaise met 1/2 eetlepel citroensap en de rest van de geraspte schildoor elkaar. Voeg zout en peper naar smaak toe. Schep de salade op twee bordenen geef de dressing er apart bij.
Per persoon ongeveer 250 g groenten
Deze salade kun je ook in een afgesloten doosje meenemen naar je werk. Wel bewaren in de koelkast.
