Uien gevuld met pittige kippenlevers

  • 4 kleine uien
  • 150 gr kippenlevertjes
  • 1 teentje fijngeperste knoflook
  • 1 mespunt paprika poeder en gemalen komijn
  • 1/2 theelepel cayenne peper
  • 75 ml witte wijn
  • 4 laurierblaadjes
  • stokbrood

Bereidingswijze

Pel de ui en snijd alleen het bovenste kapje er vanaf. Snijd de binnenste uilos en schep de binnenste laagjes van de ui eruit, laat een rand van 2 laagjesui zitten. Gebruik hiervoor een bolletjessteker of scherp grapefruit mesje.Bewaar de losse stukjes ui voor gebruik in de recepten. Indien gewenst kunnen deuien ook even gekookt worden: 5 minuten in een pan met ruim kokend water.

Verwarm de oven voor op 175 graden C. Hol de uien uit volgens het ,basisrecept en bewaar de uitgeschepte ui. Maak de kippenlever schoon en dep zedroog. Hak de stukjes ui fijn en snijd de kippenlevers wat kleiner. Verhit deolie in een koekenpan en bak hierin de uien stukjes met de knoflook. Schep dekippenlever, paprika poeder, komijn en cayenne peper erbij en bak de levers 2min. op hoog vuur. Voeg de wijn en laurier blaadjes toe en kook het geheel 5min. Haal van het vuur en verdeel de levers over de 4 uien. Steek in elke ui eenlaurier blad en schik in kleine eenpersoons ovenschaaltjes. Schep hetovergebleven bakvocht over de uien en in de schaaltjes. Bak de uien 20 minutentot de levers gaar zijn. Geef er sneetjes knapperig stokbrood bij.
