Ingrediënten:

  • 4 grote uien
  • 50 g boter
  • 1/2 eetlepel kerriepoeder
  • peper naar smaak
  • 8 dl bouillon
  • 2 dl slagroom
  • eventueel wat geschaafde amandelen

Bereidingswijze

Volg eerst het bassisrecept. Pel 4 grote uien en snijd ze in ringen. Smelt 50gram boter, leg hierin de uienringen, strooi er 1/2 eetlepel kerriepoeder overen fruit de uien totdat ze goudgeel zijn. Schep regelmatig om. Voeg peper naarsmaak toe. Giet er 8 dl bouillon bij en kook zachtjes 8 – 10 minuten. Klop 2 dlslagroom half stijf.

Verwarm de oven voor op 200 graden Celcius of zet de grill aan. Schep de soepin ovenvaste soepkoppen. Verdeel de room over de soep. Bestrooi de room metkerriepoeder en laat deze in de oven iets kleuren. Strooi er eventueel watgeschaafde amandelen over.
