Ingrediënten:

  • 200 g schoongemaakte venkelknol
  • 1 dl droge witte wijn
  • ca. 3 1/4 dl bouillon
  • zout
  • peper

Bereidingswijze

Dieet: Vegetarisch dieet, Kippenei vrij dieet, Glutenvrij dieet.

Snij van de venkelknol de stengeldelen tot bovenaan de knol weg (als ervenkelgroen aanzit kunt u dit achterhouden voor de garnering). Was de knol ensnij deze in plakken. Breng in een pan de venkel aan de kook met 1,5 dl water en0,5 dl witte wijn.

Kook de groente in 10-20 minuten gaar en zacht. Pureer de venkel met eenstaafmixer. Wrijf de massa door een zeef, zodat eventuele vezels achterblijven.Doe de gezeefde venkelmoes terug in de pan en vul aan met de bouillon. Breng debouillon aan de kook en roer vlak voor het serveren de rest van de wijn erdoor.Garneer de bouillon met fijngesneden venkelgroen.

Per persoon ongeveer 100 g groenten
