Ingrediënten:

  • 2 grote venkelknollen, schoongemaakt en kleingesneden
  • 2 aardappelen, geschild en in stukjes
  • 1 teentje knoflook, kleingesneden
  • 1⁄2 bosje peterselie, fijngehakt
  • 750 ml bouillon
  • 250 ml room
  • 100 ml Pernod
  • 1 eetl olijfolie

Bereidingswijze

Verwarm de olie in een pan en bak de venkel, aardappel, knoflook enpeterselie even aan.
Schenk er de bouillon en Pernod bij en laat 20 minuten trekken.
Maak met de staafmixer fijn.
Roer de room erdoor, verwarm de soep nog even en verdeel over 4 borden.
