Vitapep salade

Ingrediënten:

  • 5 st. Vitapep
  • 8 st. cherrytomaatjes
  • 150 gr. broccoli roosjes, gestoomd of geblancheerd
  • 50 gr. rode uienringen, gehalveerd
  • 8 bl. basilicum, fijn gesneden
  • 1 mesp. rode peper, gehakt

Bereidingswijze

Was de Vitapep, haal eventuele pitjes er uit en verwijder het kroontje.

Snijd de Vitapep in grove ringen.

Halveer de tomaatjes en meng deze met de Vitapep, rode ui, broccoli en peper.

Roer het limoensap, sojasaus, sesamzaad door elkaar met de zonnebloemolie.

Meng deze door het groente mengsel samen met de basilicum.

Laat dit een half uur marineren.

Heerlijk als salade, voorgerecht of als bijgerecht.

Deze vegetarische salade kan eenvoudig worden uitgebreid met vis, vlees of gevogelte. Bijvoorbeeld gestoomde makreel door de salade plukken of rosbiefreepjes of roergebakken kipreepjes door de salade mengen.
