Ingrediënten:
- 4 struikjes witlof
- 75 g spekreepjes
- 50 g cherrytomaten
- ca. 20 g rucola
- 6 eetlepels olijfolie
- 1-2 eetlepels azijn of balsamicoazijn
- 1/2 eetlepel appelstroop
- 1/2 theelepel mosterd
- zout
- versgemalen peper
Bereidingswijze
Maak de witlofstruikjes schoon en snij elk struikje in de lengte in zessen.Halveer de cherrytomaten. Bak in een wok op een hoog vuur de spekreepjes uit enneem ze uit de wok. Roer in een kommetje de azijn, mosterd, appelstroop, zout enpeper naar smaak en vijf eetlepels van de olijfolie tot een dressing.
Verhit de rest van de olijfolie in de wok en roerbak hierin de witlof circa 3minuten. Voeg de laatste minuut de dressing toe en warm deze even mee. Schep dewarme witlof direct met een schuimspaan uit de wok en verdeel deze samen met derucola, tomaten en spekreepjes over twee borden. Schenk er de lauwwarme dressingover en serveer deze salade direct.
Dit gerecht bevat ca. 200 gram groenten per persoon.

Geschikt voor: glutenvrij dieet, natriumbeperkt dieet,energieverrijkt dieet
Dieet variatietip: Mosterd kun je vervangen door een halflepeltje extra azijn en een half lepeltje extra appelstroop te nemen. Doe ervoor natriumbeperking geen extra zout bij. Voor energiebeperking, neem maar 0,5lepel olie voor het bakken van witlof en 1 lepel olie voor het maken van hetsausje. Doe er in dit geval wel iets meer azijn bij of voeg nog wat citroensaptoe voor de smaak. Vervang spekreepjes door hamreepjes.
