Ingrediënten:

  • 400 g gesneden rode kool
  • 2 lente-uitjes
  • 1/2 rode peper
  • 1 – 2 teentjes knoflook
  • 1 – 2 cm verse gemberwortel
  • 2 eetlepels olijfolie
  • 1 eetlepel rode wijnazijn
  • 1 eetlepel rozijnen
  • 1/2 eetlepel honing
  • peper
  • eventueel zout

Bereidingswijze

Pel de knoflook en hak deze fijn. Schil het stukje gemberwortel en rasp ditfijn. Snij het kapje van de rode peper, snij hem vervolgens doormidden enverwijder het zaad en de zaadlijsten. Snij de peper in ragdunne reepjes.

Verhit een eetlepel olijfolie, onafgedekt, in een ronde, ruimemagnetronbestendige schaal met een inhoud van 2-2,5 liter, 1 minuut, ca. 750Watt. Voeg de knoflook, gember en rode peper toe en zet de schaal terug in demagnetron, onafgedekt, 1 minuut, ca. 750 Watt. Voeg de rode kool toe, schep goedom, voeg de azijn, rozijnen en honing toe en schep weer om. Zet de schaal terugin de magnetron, afgedekt, 7-12 minuten, ca. 750 Watt. Schep tussentijdstweemaal goed om. Snij de lente-uitjes in smalle ringen en voeg deze de laatsteminuut toe aan de kool.

Breng op smaak met  peper (en eventueel zout) en roer er op het laatsteventueel nog een eetlepel olijfolie door. Laat de groenten afgedekt evennagaren. Lekker met runderlapjes en gekookte aardappelen.Vegetarische variatie:vervang de runderlapjes door quornstukjes.

Dit gerecht bevat 200 gram groente per persoon.

Dieet variatie tip: Volg je energiebeperkt dieet? Voeg dangeen rozijnen en honing aan het gerecht toe en neem maar 1 eetlepel olijfolie.Voor eiwit- en energieverrijking  kun je wat noten door het gerecht doen, alshet klaar is.
