Ingrediënten:
- 4 st. Vitapep
- 1 st. sjalot, klein, gesnipperd
- ½ teen knoflook, gehakt
- 8 st. zwarte olijven zonder pit
- 200 gr. varkenshaas reepjes
- 30 gr. rucola
Bereidingswijze
Was de Vitapep.
Snijd de Vitapep in de lengte in vieren en haal eventuele pitjes er uit
Maak een bakpan heet met olijfolie en bak de knoflook en de uien zachtjeszonder te kleuren.
Voeg honing, sinaasappelsap en citroensap toe en kook dit in tot het eensiroop is.
Voeg de Vitapep toe en bak voor 2 minuten tot de siroop een mooi sausje om deVitapep maakt.
Voeg de olijven en de gehakte peterselie toe.
Bak in een pan de varkenshaas snel aan en meng deze met de zoetzure Vitapep.
Voor het serveren bestooien met rucola.
