Ingrediënten:

  • 150 gram gemengd zachtfruit (aardbeien, frambozen, bramen, rode/blauwe bessen)
  • 1 dl slagroom
  • 1 eetlepel geraspte mierikswortel (uit een potje)
  • 1 eetlepel citroensap
  • zout, peper
  • 1 uitje
  • 2 takjes verse munt
  • 75 gram gerookte kipfilet
  • 75 gram gemengde sla (frisée, eikenblad, lollo bionda)
  • 1 eetlepel geroosterde sesamzaadjes

Bereidingswijze

Maak het zachtfruit schoon. Klop de slagroom met de mierikswortel. Breng opsmaak met citroensap, zout en peper. Snij het uitje in fijne ringen. Hak de muntfijn. Snij de kipfilet in dunne plakjes. Verdeel de sla over twee grote platteborden. Verdeel er de kip, ui en het zomerfruit over. Schenk er de room over ofserveer deze er apart bij. Bestrooi de salade met de sesamzaadjes en defijngehakte munt.

Neem in plaats van sesamzaadjes fijngehakte noten of geroosterde pijnboompitten. Snij 2 kleine stokbroodjes open. Bestrijk de binnenkant met de room en bestrooi met sesamzaadjes. Verdeel de sla, de kip en het zomerfruit erover.
