  • 1 teentje knoflook
  • 3 eetlepels olijfolie
  • 2 eetlepels azijn of frambozen azijn
  • versgemalen peper
  • ca. 225 g kastanjechampignons
  • 60 g frambozen
  • 60 g bramen
  • 1 avocado
  • sap van 1/2 citroen
  • krulandijvie

Bereidingswijze

Pel het teentje knoflook en snij dit in plakjes. Plet de plakjes met dezijkant van een mes en wrijf ze, met de achterkant van een theelepeltje, in eenkommetje (of in een vijzel) tot een gladde en romige pasta. Roer er beetje voorbeetje de olijfolie door. Meng de knoflookolie met azijn en wat versgemalenpeper. Veeg de kastanjechampignons schoon met een champignonborsteltje of eenstukje keukenpapier. Snij de champignons in kwarten. Laat de champignons in deknoflookmarinade 2 uur marineren.

Maak frambozen en bramen voorzichtig schoon. Halveer de avocado en verwijderde pit en de schil. Snij de avocado in plakjes en besprenkel ze met citroensap.Schik de avocadoplakjes met de krulandijvie en de champignons op 2 bordjes. Leger de frambozen en bramen bij.

Dit gerecht bevat 100 gram groente en 125 gram fruit perpersoon.

De champignons worden nog lekkerder, als je ze een nacht laat marineren.
