Ingrediënten:
- 100 g pistachenootjes
- 1 ui
- 200 g champignons
- 3 eetlepels olie
- 2 eieren
- 3 eetlepels melk
- 2 theelepels Dijonmosterd
- 1 rode paprika
- 1 oranje paprika of gele paprika
- 1 sjalot
- 1 teentje knoflook
- 3 eetlepels slagroom
- zout
- peper
- suiker
- verse bieslook
- 4 soufflébakjes
Bereidingswijze
Warm de oven voor op 180 graden. Hak de pistachenootjes fijn in eenkeukenmachine of hakmolen. Pel en snipper de ui. Borstel de champignons schoonen hak ze fijn. Verhit 2 eetlepels olie in een koekenpan. Bak ui en champignonsop een laag vuur ca. 5 minuten. Doe het over in een keukenmachine en pureer hettot een glad mengsel. Klop de eieren los in een kommetje. Doe gehaktepistachenootjes, ei, melk en mosterd bij de champignon-uipuree in dekeukenmachine en laat het 15 seconden meedraaien. Breng op smaak met peper enzout. Vet 4 soufflébakjes in met boter. Verdeel de puree over de bakjes. Dek afmet aluminiumfolie en zet het ca. 25 minuten in de voorverwarmde oven tot deinhoud stevig is. Was intussen de paprika, halveer ze, verwijder de zaadlijst ensnij het vruchtvlees in blokjes. Pel de sjalot en hak hem fijn. Pel de knoflook.Verhit 1 eetlepel olie in een sauspan. Bak de sjalot op een laag vuur ca. 2minuten. Voeg de paprika toe en pers er de knoflook boven uit en bak het 3minuten mee. Doe over in een keukenmachine en pureer het tot een glad mengsel.Breng de saus in een pan opnieuw aan de kook. Voeg de slagroom toe. Breng opsmaak met zout, peper en voeg eventueel suiker naar smaak toe. Verdeel de sausover 4 bordjes. Schud de puddinkjes uit de bakjes op de borden. Garneer met watlange sprieten verse bieslook.
