Ingrediënten:

  • 1 kg witte champignons + 3 extra
  • 175 gram boter, waarvan 50 gram in de koelkast laten
  • 1,5 liter visbouillon
  • 2 takjes tijm
  • 1 laurierblaadje
  • 4 dl room
  • 18 langoustines
  • 1/3 wit van prei
  • paar takjes kervel

Bereidingswijze

Maak de champignons schoon. Houd drie stuks achter voor de garnering. Smelt75 gram van de boter en bak ze op een lage warmtebron aan (ze moeten blankblijven).

Schenk de visbouillon erbij en breng alles aan de kook met één takje tijm enhet laurierblad. Laat de bouillon tot de helft inkoken. Schenk de room erbij enlaat het samen nog even inkoken. Neem de pan van de warmtebron, laat hemafkoelen en zet hem koud weg. Verwijder de tijm en het laurierblaadje en pureerde soep in de blender of met de staafmixer. Schenk de soep vervolgens door eenfijne zeef.

Pel de langoustines tot aan het staartje en verwijder het darmkanaal. Smelt50 gram boter in de pan en laat de langoustines hierin stoven met het takje tijmtot ze half gaar zijn. Neem ze uit de pan en bewaar het bakvocht. Breng dechampignonsoep aan de kook, breng op smaak met peper en zout en monteer met deresterende 50 gram koude boter in blokjes gesneden. Voeg het gezeefdelangoustinevocht toe.

Was en droog de prei, snijd deze in julienne en frituur de reepjes in de heteolie goudgeel.

Dresseer de langoustines rechtop in een diep bord (3 per persoon). Breng desoep nogmaals aan de kook en klop deze schuimig met een staafmixer. Giet de heelhete soep over de langoustines en garneer met de achtergehouden in plakjesgesneden champignons, verse kervel en de gefrituurde prei op de langoustines.Serveer direct.
