Ingrediënten:

  • 1/2 dl sinaasappelsap
  • 1/2 krop ijsbergsla
  • 100 g gerookte kipfilet
  • 1 handsinaasappel
  • 1 eetlepel limoensap
  • 1 eetlepel olijfolie
  • 2 eetlepels yoghurtmayonaise
  • 2 eetlepels in reepjes gesneden basilicum
  • zout
  • peper
  • 2 grote tortilla’s

Bereidingswijze

Breng het sinaasappelsap in een kleinesteelpan aan de kook. Laat het sap totde helft inkoken en laat het afkoelen.Verwijder eventueel de buitenste bladerenvan de sla, halveer de krop en snij de sla in brede repen. Snij de kipfilet inplakjes. Boen de sinaasappel schoon en rasp boven een kom alleen het oranje vande schil van de helft van de sinaasappel eraf. Snij aan de boven- en onderkantvan de sinaasappel een kapje af. Zet de sinaasappel recht op en snij met eenscherp mes de schil los van het vruchtvlees, zodanig dat ook het onderhuidse witwordt verwijderd. Snij de partjes één voor één los langs de “tussenschotjes”.

Voeg het limoensap, het sinaasappelsap, de olijfolie en de yoghurtmayonaiseaan de sinaasappelschil toe en klop alles tot een dressing. Roer de basilicumerdoor en voeg zout en peper naar smaak toe. Schep de repen sla erdoor. Warm detortilla’s op een laag vuur in een droge koekenpan. Verdeel de sla met dressing,de stukjes sinaasappel en de kipfilet over de tortilla’s, vouw de onderkant vande tortilla’s over de vulling en vouw dan de zijkanten over elkaar.

Per persoon ongeveer 75 gram groenten 50 gram fruit
